Oatmeal Bread

Soft, hearty oatmeal bread that’s wonderful with soup, jelly, or just a little butter.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 2 cups boiling water
  • 3 tablespoons butter
  • ⅔ cup brown sugar
  • 2 tablespoons molasses
  • 1 tablespoon sugar
  • ½ cup potato flakes
  • 2 packages active dry yeast
  • 1½ teaspoons salt
  • ½ cup warm water
  • 5 cups flour

Directions

  1. In a large bowl, combine the oats, boiling water, butter, brown sugar, and molasses. Try not to eat it—this makes an awesome bowl of oatmeal!
  2. In a separate bowl, combine the sugar, potato flakes, salt, yeast, and warm water. Let sit for about 5 minutes.
  3. Once the oatmeal mixture is warm to the touch, stir in the yeast mixture. Add the flour and mix until a dough forms.
  4. Mix with a dough hook for 6 minutes, or knead by hand until the dough no longer sticks to your fingers.
  5. Cover and let rise for 1 hour.
  6. Shape into loaves and let rise for another hour.
  7. Bake at 350°F for about 30 minutes, until golden brown.

Enjoy with soup, jelly, or all by itself!
